When Alex Labart, chef and owner of the iconic Burleigh Heads restaurant Labart, reached out to Beudi about a collab, it was a dead-set no brainer.
Beudi’s liquid chef Jack Connor - award-winning bartender and owner of Rosella’s Bar has been tinkering with nostalgic Aussie flavours for years. Jack and Alex go way back, having cooked up playful projects like the hatted Jaffle, a classed-up spin on one of Australia’s most loved snacks, the humble toasted sanga. So when Jack launched Beudi, an Aussie-distilled agave brand dedicated to local ingredients and flavours, it only made sense their next evolution would celebrate Aussie culture in the same premium yet playful way.
Enter La Pub, a cheeky collab event and a nod to pub classics, reimagined through Labart’s kitchen and Beudi’s cocktails.
Together, Jack and Alex share a knack for reworking the familiar into something extraordinary. The menu hits that sweet spot: nostalgic but elevated, fun yet refined.
Behind the bar, Jack is giving the classic pub squash a Beudi glow up, Beudi Blanco Australian Distilled Agave and bush lemon cello, topped with champagne and served table side - alongside a line-up of cocktails that hero Aussie ingredients with clever nods to the drinks we’ve all sunk at our favourite watering holes.
On the table, Alex is serving up pub staples with a Labart twist. Think brisket burger with the lot, chicken parmy nuggets with Napoli dipping sauce, and crispy fish spring rolls with house tartar. Comfortingly familiar, just with the right amount of polish.
La Pub is everything we love about our local Aussie pubs, reimagined with a distinctly modern Australian edge. We can’t wait to share this drink and food menu with you.
